So, who likes chicken salad?

I mean, real chicken salad. No greek yogurt. No grapes, or dried cranberries. No spices that I can’t pronounce the name of. Nope, just good old fashion shredd chicken, mayo, mustard, celery, salt and pepper.

The way chicken salad should be.

Does anyone else enjoy shredding chicken as much as I do?

So guys, I have to to admit – I love mayonaisse.

Like, really love mayonnaise

Especially in chicken salad

On a tortilla with salmon

…or a chicken patty

As far as fats, peanut butter will always hold the #1 place in my heart (though recently Trader Joe’s almond butter has been some stiff competition)…
However, other sources of fat most certainly should not be put on the back burner. My favorites as of late…

  • Mayo
  • Chia Seeds
  • Salad dressing
  • Butter
  • Nuts (preferably glazed walnuts – obsessed!)
  • Chips that AREN’T “fat free” (yeah, there was definitely a point in my life when I would ONLY eat pretzels. Lameface)
  • Coconut (mission: find coconut butter is still in full effect. Ugh)
  • Almond oil (so good for roasting sweet potato fries!)
  • Ice cream/cake/the things that make life worth living.

I promise this post has a point.

You see, mayo has been on my “aw hellz no” list for a hot minute (read: the past 2 years of my life). In the past few months, however, I’ve become a lot more at ease with incorporating fats in to my “diet” (and by diet I simply mean all the food I put in my mouth). In fact, if I had to fathom a guess, I’d say that fats make up about 35-40% of my daily caloric intake and I feel like a freaking powerhouse. Oh and my hair? So much volume. I’m pretty sure I could out-poof Snooki.

…p.s. 35-40% works for meYou may need more/less depending on your glorious body! It took me a long time to realize that my body reacts REALLY WELL to fats, so experiment and find out what works for you

Moral of the story: A life devoted  to fat free pudding cups, frozen yogurt, and kraft singles simply isn’t a life at all. If you are so inclined to eat these foods, my advice to you is to to eat those pudding cups with a spoonful of peanut butter or a handful of coconut perhaps, top your frozen yogurt with nuts or shredded coconut, and as far as fat free cheese — well, just don’t eat it at all, k?

Oh, and never forget: eating fat doesn’t make you fat – just happy :)
