Guys! I LOVE YOU! I was astounded by all of the comments I received in response to my last post. I had no idea long distance relationships were SO common and it’s really comforting to know that there’s other people out there who can relate to my struggles. Misery loves company, no?

A lot of you also offered up some great tips and words of wisdom, so if you have the time I definitely recommend checking out the comments section.

As of late I’ve been in a bit of a dinner rut. More often than not I’ll simply grill up a chicken breast and pair it with some steamed veggies, a salad, bread (always bread) and call it boring dinner.

Clearly I have the time to whip up some killer meals, but my culinary motivation always seems to runs out after 11:00am. Being that I am fortunate to have so much time and a lovely kitchen, I’ve decided I need to get my butt in gear and start making things that take *gasp* ingredients and, *eep* more than 20 minutes.

Like Averie’s veggie bake...

The best part of this recipe is that you can completely modify it according to what you have on hand.

I used…

  • 1 sweet potato
  • broccoli
  • mushrooms
  • onion
  • tofu (!!)
  • veggie crumbles
  • 1/4 cup chicken stock (I didn’t have any soup! Next time I’m going to try cream of mushroom. Nommmm)

topped with nooch and dash

with a side salad and dinner roll + hummus

I can’t believe how flavorful this was for such a simple dish.

Oh! and guess what else…

I LOVED THE TOFU! In fact, it might have been my favorite part.

I never thought I’d see the day.

It’s no secret that breakfast is undisputedly my favorite meal of the day…

but lunch and dinner just never wow me.

What’s your favorite go-to dinner? I’m always open to inspiration :)

Off to watch the American Idol auditions in hopes that they will make me feel slightly more confident in my own singing abilities. Night!
