PB Jenny

hey there friends and thank you so much for visiting my page =) In a few short words I am a 19 year old English major at Sacred Heart University with a passion for family, love, creativity, yoga, and i kind of like peanut butter too ;). Sure, those are just a few tidbits about me but what is the story of the girl behind the jar?

I am seriously obsessed with my new blogging toy!

I bought this tripod a few days ago and finally decided to whip it out today.

Hm, that sounded much more risque than intended.

Anyways, it makes taking pictures SO MUCH EASIER, especially now that I’m starting to dabble in manual mode (It’s about time). I can adjust the settings without losing focus and the ‘pod is so much more stable than my shaky hands.

Personally, I think these pictures are so much clearer than usual. What do you think?

Doesn’t the chocolate sauce look photoshopped? I love!

Okay, for those of you aren’t as easily enthused about tripods as I am, perhaps you’ll be more intrigued by this breakfast. It was a winner!

First, I whipped up Alex’s bitter chocolate cake for one. I wasn’t sure if I would be able to tolerate bitter chocolate, so I modified her recipe slightly.

single serve chocolate fudge cake

(Adapted from Alex’s Bitter Chocolate Cake for One)

Ingredients

  • 1 flax egg
  • 1/4 cup cocoa powder
  • 2 tbsp vanilla chobani
  • vanilla extract to taste (I used 1/2 tsp)
  • 1/8 tsp baking bowder
  • pinch of salt
  • 1 packet of stevia
  • coconut milk until mixture reaches a “brownie batter” consistency (I used about 1-2 Tbsp)

bake in the oven at 375 for 15-20 minutes.

While the cake was cooking, I prepared a batch of oatmeal using Katie’s melted banana trick. Once the cake was done, I plopped it on top of the oats, added a spoonful of Teddie’s PB, raspberries, and a side of  vanilla chobani with vanilla almond granola.

The cake turned out super moist and was more like a fudge than a cake. I attribute to the fact that I used a flax egg rather than a regular one.

I wasn’t complaining.

I’d say my day is off to a pretty great start so far! Now I’m off to get my sweat on and run a few errands then going to see Black Swan with Gingie tonight. I was actually really surprised that he agreed to go. I think this may be because he heard that there was some pretty explicit girl on girl action. Understandable.

Have a good one, dolls!
