PB Jenny

hey there friends and thank you so much for visiting my page =) In a few short words I am a 19 year old English major at Sacred Heart University with a passion for family, love, creativity, yoga, and i kind of like peanut butter too ;). Sure, those are just a few tidbits about me but what is the story of the girl behind the jar?

coco-nutty pancakes

Step 1: Accept and embrace the fact that you are an indecisive flour addict.

Step 2: Mix dry ingredients

  • 2 Tbsp peanut flour
  • 2 Tbsp coconut flour
  • 2 Tbsp whole wheat flour
  • 2 Tbsp wheat germ
  • 1/4 tsp baking powder
  • cinnamon and sweetener to taste

Step 3: combine dry ingredients with wet

  • 1 egg
  • 2 Tbsp greek yogurt (I use vanilla)
  • 1/2 cup milk of choice (vanilla soymilk for moi) **note, usually I don’t need an entire 1/2 cup of milk. I just add it to the batter until it reaches the right consistency and pour the rest in my coffee**

Step 4: cook pancakes on the stovetop over medium-high heat until golden brown (that phrase always makes me hungry)

Step 5: Toppings to boot. This is the most crucial step and nut butter is mandatory.

Step 6: Demolish.

I know the ingredients and varying flours are slightly tedious (not to mention, expensive) but these pancakes are worth it.

…like, really worth it.

What’s your favorite flour to bake with?
