Amy’s gluten free Tamale Verde is a spin on the traditional tamale. The organic masa is filled with Monterey Jack Cheese, jalapenos and chilies, and then topped with a verde sauce. The masa is soft, flavorful and buttery tasting, and breaks easily with a fork. Amy’s Kitchen certainly does not scrimp on the cheese. Unlike most typical microwave dinners where the cheese "magically vanishes in the microwave", Amy’s is gooey and rich, embedded with chilies and jalapenos. They aren’t too spicy, and are perfect with the consistency of the cheese. The verde sauce on top is a scrumptious compliment-- slightly tomato flavor with a sweet taste of lime. There is also a side of brown Spanish rice with organic black beans which work very well with the dish. They have a combination flavor between tomatoes and a "taco seasoning" taste. The rice is fluffy, the beans are soft, and if you mix the rice with the leftover verde sauce you truly get a flavorful, out of this world taste combination. This meal is satisfying and could easily be mistaken for popular restaurant style Mexican dishes.
