Amy's Black Bean Enchilada meal hits the spot when I was craving something filling and tasty. The enchilada is stuffed with soft black beans and vegetables, like corn kernals and bits of zucchini. It is actually quite a large enchilada too, which makes me very happy to see. On the side there is rice with more bits of vegetables mixed in. It is delicately seasoned, fluffy and sure to please. I really liked that there was a generous portion, and that the rice was not too chewy. Lastly, there is a little pile of pinto beans to complete this meal. Very soft and flavorful, these break easily with a fork, and are very enjoyable. Overall, a great meal, and I love that there was a LOT of food in this dish! There's also bit of spice to this whole meal, which really adds a nice touch!
