This meal is amazing. The enchilada has ooey, gooey cheese inside that I will admit looks a bit greasy, but is absolutely delicious. It's soft, and easy to break apart with a fork, with a flavorful green sauce on top that is slightly sweet. The beans on the side were slightly mashed, but not super mushy, so that was good. Lastly, the rice has pieces of carrots and corn in it. The rice still has a bit of a bite to it, but is still pretty fluffy. Overall, really delicious, and something I could eat over and over again!
