I'm always up for baking- whether it's cookies, brownies, muffins, cakes. I don't think there's anything quite like the smell of freshly baked goods in the house. Cherrybrook Kitchen Chocolate Cake Mix certainly provided some tasty treats in my household. According to the box, this all natural mix was also dairy free, peanut/nut free and vegan- quite a change from other mixes I may have used in the past. Making it was very easy- the mix itself smelled like a sweet chocolate bar, and resembled a light brown cocoa powder. I swapped the 1/2 cup vegetable oil for 1/2 cup of natural applesauce, and mixed it with the cake mix and water in a bowl. At first, I was a little taken aback- what are these BUMPS that won't go away? Then I noticed- surprise! They were chocolate chips! The final product was quite tasty. I made one cake pan instead of 12 cupcakes, and it certainly puffed up! The taste was quite bizarre- in a good way. I was expecting fluffy cake- but, this was way more like fudgy brownies! Still very good, you could have fooled me into thinking I was eating brownies!
