Ingredients

2 cup whole wheat flour 2 tsp. baking soda 2 tsp. pumpkin pie spice 1/2 cup granulated sugar 1 serving apple, Fuji 3 medium carrots, raw 1 large pear, fresh 1/2 cup cranberries, dried 1/2 cup almonds, slivered 1 1/2 cup pumpkin, canned, without salt

Preparation

Preheat oven to 350. Mix together first group of ingredients (up to granulated sugar). Grate apple, carrots and pears and add to dry ingredients. Pulverize cranberries and almonds in a food processor or Magic Bullet. Add to dry ingredients. Add pumpkin. Stir until everything is combined. Divide mixture into greased muffin cups and bake for fifteen to twenty minutes, until a toothpick inserted in the middle comes out clean. Allow to cool.
