Ingredients

2 Tbsp Mardona extra virign olive oil or other natural brand 2 Tbsp Sherry or red wine vinegar 1 Tbsp Fine chopped shallot 1 Tbsp Dijon mustard 1/2 Tsp. Paprika 1/4 Tsp. Salt 1/4 Tsp. Freshly ground pepper 2 cup Cooked brown rice 1 15 oz can Lentils, rinsed 1 Large Carrot, diced 2 Tbsp. Fresh Parsley

Preparation

Whisk oil, vinegar, shallot, mustard, paprika, salt and pepper in a large bowl. Add rice, lentils, carrot and parsley; stir to combine.
