Shrimp and feta cheese come together with the flavors of the Mediterranean in this Greek-inspired pasta recipe.

Ingredients

4 each tomatoes 3/4 lb medium shrimp, cooked, shelled and deveined 1/2 lb feta cheese*, crumbled 6 each scallions, chopped 4 tsp fresh oregano, minced 1 dash salt and freshly ground black pepper to taste (sea salt if on a corn-free diet*) 1 lb spinach linguine

Preparation

Cut tomatoes in half crosswise. Squeeze to extract seeds. Coarsely chop tomatoes. Combine tomatoes, shrimp, feta cheese, scallions, oregano, salt, and pepper in a large bowl. Toss well and let marinate in refrigerator for 1 hour. Cook linguine according to package directions. Rinse and drain well. Toss warm pasta with shrimp and feta cheese mixture and serve immediately.
